The typical cuisine of the area
Nn the Apennine Mountains of Reggio Emilia, cooking is a true art and is done out of passion, love and to bring the family together.
Women who spend hours in the kitchen are called Rezdore and pass on the original recipes to new generations.
The typical dishes evoke the flavors of childhood: cappelletti in broth and more generally egg pasta such as tortelli and tagliatelle, erbazzone Reggiano which in the mountains is called Scarpazzone with the addition of rice, and last but not least Parmigiano Reggiano cheese present in most recipes.
The typical dish of Valestra and Montelago is “i Casagai,” a dish that originated in this area, a typical fried polenta with the addition of beans in the mixture with a secret ingredient and passed down from generation to generation.
